Pecan shortbread cookies, or "pecan sandies," are supposed to have a drier, crumbly texture, and this works well in the gluten-free world. I think the taste is spot on for pecan sandies, but the texture works well also. I got these in the local co-op store.
The butter in these does not seem to bother me much, though I have little tolerance for dairy now.

I'm hungry, but I can't eat gluten, dairy, and maybe whole grain rice. This is the list of products I have tried, and how they taste and agree (or not) with my stomach. I am doing this as a record for myself of what I have or have not tried, but I thought it might help others so I'm sharing.
